Um, why?
The iPhone already uses a Unix style operating system that has been
hacked over and over. It is pretty easy to install Unix apps for the
iPhone as it is without losing phone functionality or touch screen
support. Consequently, porting Einstein to iPhone would be more
difficult for Linux on iPhone thatn it would be using the standard
iPhone toolset.
There is not much on the software side at all that would keep a good
software developer from putting Einstein on the iPhone. The main issue
would be bad usabilty with the endresult: emulation speed would make
the Newton OS really slow, but worse would be the missing pen. Hitting
a Newton button on the iPhone screen is extremely difficult because it
would be tiny and hidden under the finger (it is difficult enough to
use the original iPhone keyboard which is twiche as big per pixel
compared to the Newt). HWR would not work at all.
